Ingredients

  • 2 whole wheat rotis
  • 2 eggs
  • 1 cup fresh spinach, chopped
  • ¼ cup onion, finely chopped
  • 1 small tomato, diced
  • 1 tsp olive oil
  • ½ tsp cumin powder
  • Black pepper to taste

Instructions

  1. 1Heat oil in a pan. Sauté onion for 2 minutes.
  2. 2Add spinach and cook until wilted.
  3. 3Beat eggs with cumin and pepper. Pour over the spinach.
  4. 4Scramble gently until eggs are just set.
  5. 5Warm rotis on a tawa.
  6. 6Fill each roti with the egg-spinach mixture and tomato.
  7. 7Roll tightly. Cut in half and pack.
