Ingredients
- 2 whole wheat rotis
- 2 eggs
- 1 cup fresh spinach, chopped
- ¼ cup onion, finely chopped
- 1 small tomato, diced
- 1 tsp olive oil
- ½ tsp cumin powder
- Black pepper to taste
Instructions
- 1Heat oil in a pan. Sauté onion for 2 minutes.
- 2Add spinach and cook until wilted.
- 3Beat eggs with cumin and pepper. Pour over the spinach.
- 4Scramble gently until eggs are just set.
- 5Warm rotis on a tawa.
- 6Fill each roti with the egg-spinach mixture and tomato.
- 7Roll tightly. Cut in half and pack.
